Recipe Ingredients for Pumpkin Muffins

1 cup oatmeal
1 cup plain yogurt
1 egg
1/2 cup sugar
1/4 cup oil
1 1/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1 1/2 cup pumpkin
1 tsp cinnamon
1/8 tsp clove
1/4 tsp ginger

Recipe Directions for Pumpkin Muffins

In large bowl combine oatmeal and yogurt. Let it stand for a few minutes, so the oatmeal can soak up some of the yogurt. Add the egg, sugar, and oil. beat well. Add flour, baking soda, salt, and baking powder (cinn., clove and pumpkin). Mix until dry ingred. are moistened. Do not over mix. Spoon into oiled muffin cups. Bake at 400 for about 20 min. Makes 12 muffins.
