pumpkin muffins, low cal, sugarfree

Recipe Ingredients for Pumpkin muffins

2 c flour
1 c sugar
2 tbsp baking powder
2 tsp salt
2 tsp cinnamon
2 eggs
1 cup low fat milk
1/2 cup applesauce
1 cup pumpkin puree

Recipe Directions for Pumpkin muffins

  1. Preheat oven to 350, spray muffin pans w/ nonstick spray

  2. In large bowl, mix flour, sugar, baking powder, cinnamon & salt.

  3. In seperate bowl, mix eggs, milk, pumpkin, applesauce, & vanilla. Add to dry ingredients and mix until moistened. Fold in chocolate chips.

  4. Fill cups 2/3 full and bake @ 350 for approx 25-30 min until toothpick comes out clean

  5. (this makes more than 24 muffins, probably about 30. i filled mine up to the top and theyre practically overflowing but 24 cups is all i had!)
