Recipe Ingredients for Pumpkin Muffins

1 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 cup raisins
1 egg
1/4 cup granulated sugar
1/3 cup canola oil
1 cup pumpkin
1/2 cup skim milk

Recipe Directions for Pumpkin Muffins

  1. Combine first 8 ingredients in large bowl. Stir well.

  2. In small bowl beat egg until frothy. Mix in sugar, oil, pumpkin and milk. Add to dry ingredients and stir just to moisten.

  3. Bake at 400F for 15-20 min.
