Easy, lower fat pumpkin muffins with lots of fiber

Recipe Ingredients for Pumpkin Muffins

1 box spice cake mix
15 oz. pumpkin
1/2 cup water
1 cup grated carrots
1 tsp pumpkin pie spice
1 tsp cinnamon

Recipe Directions for Pumpkin Muffins

  1. Mix all ingredients listed above together. Do not add oil, egg, or anything else instructed to add by mix.

  2. Bake in muffin cups sprayed with no-stick coating @ 350 degrees using mix box as a guide. Jumbo muffins = 2 small = 320 calories
