Pumpkin Muffins Recipe

This is a good treat in the Fall around the Holidays. They are not overly sweet and you can add Cream Cheese frosting if desired.

Recipe Ingredients for Pumpkin Muffins

1 1/2 cup all purpose flour
1 tsp baking powder
15 oz can pumpkin
1/3 cup canola oil
2 large eggs
1 tsp cinnamon
1/4 tsp ginger
1/2 tsp nutmeg
1 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tbsp sugar

Recipe Directions for Pumpkin Muffins

  1. Preheat oven 350

  2. Put 12 paper liners in muffin pan

  3. Whisk tog. flour and baking powder in small bowl. Set aside.

  4. Whisk tog. pumpkin, oil, eggs, spices, 1.25 cup sugar, baking soda and salt in large bowl until smooth, then whisk in flour mixture until just combined.

  5. Stir tog. 1 tsp cinnamon and 1 tbsp sugar in another bowl.

  6. Divide batter among muffin cups, about 3/4 full, then sprinkle tops with the cinnamon/sugar mixture. I don't even use 1/2 of this. I just sprinkle very little and they are not overly sweet.

  7. Bake until puffed and golden brown and a wooden pick or skewer inserted into center of muffin comes out clean, 25-30 minutes. My oven bakes them in 25 min.

  8. Cool in pan on a rack 5 minutes, then transfer muffins from pan to rack and cool.
