Recipe Ingredients for Pumpkin Muffins

1 1/4 cup wheat flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup quinoa
1/3 cup egg whites
3/4 cup canned pumpkin
1/2 cup almond breeze
2 tsp vanilla extract
1/2 cup applesauce

Recipe Directions for Pumpkin Muffins

  1. Combine flour, sugar, pie spice, baking soda, salt

  2. Add cooked Quinoa

  3. Beat eggs w/ pumpkin, milk, and vanilla

  4. Mix wet into dry without overmixing

  5. Bake at 400 degrees for 30-35 minutes
