The grand kids love these and they are pretty good for them but don't tell them that.

Recipe Ingredients for Pumpkin Muffins

1 egg
1/2 cup coconut milk beverage, So delicious unsweetened
1/2 cup canned pumpkin
1/4 cup margarine
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup sugar
1/4 cup Splenda
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 400 degrees

  2. melt margarine

  3. mix all dry ingredients and set aside.

  4. Slightly beat egg and then mix in milk, pumpkin and melted margarine.

  5. Stir in dry ingredients just until flour is moistened. The batter should be lumpy.

  6. Spoon into 12 muffin cups which are greased or paper lined.

  7. Bake until lightly browned and remove from pans immediately. Serve while warm if possible.
