Recipe Ingredients for pumpkin muffins

15 ounces pumpkin
1 cup sugar
1 cup splenda
3/4 cup vegetable oil
1/4 cup applesauce
2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger

Recipe Directions for pumpkin muffins

  1. mix pumpkin, sugars,oil and applesauce together until smooth.

  2. mix dry ingredients together in separate bowl then add to wet mixture. blend all together.

  3. fill in muffin pans. bake in 350 degree oven 30-35 minutes or until inserted toothpick comes out dry.

  4. ** can also use mini-muffin pan. Bake for approx 25 minutes instead. Test as with larger muffins.
