My family loves these. My 6 year old eats these in her lunch every day.

Recipe Ingredients for pumpkin muffins

1 cup flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1 large egg
1/2 cup fat free milk
1 1/2 cup pumpkin
1/2 cup oatmeal

Recipe Directions for pumpkin muffins

  1. Preheat oven to 350. Spray a 2 muffin tins.

  2. Mix flour, sugar, baking powder, baking soda, salt and pumpkin pie spice. In a samll bowl, beat the egg, add milk and pumkin. Pour over flour mixture and stir.

  3. Spoon into muffin bans and bake 35 to 40 minutes.
