Pretty much like every other healthy muffin recipe out there.

Recipe Ingredients for Pumpkin muffins

1 cup whole wheat flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup applesauce
3 tablespoons egg whites
1 cup pumpkin
1/3 cup water
1/4 cup sugar

Recipe Directions for Pumpkin muffins

  1. In one bowl, cream the water, margarine, egg and sugar.

  2. Combine all of the dry ingredients and mix with the wet ingredients.

  3. Add the pumpkin.

  4. Spoon mixture into muffins cups.

  5. Bake at 350 degrees for 20 minutes or until stick comes out clean
