Makes 24 servings



reduced sugar and fat with raisins and nuts. May substitute 2 tsp pumpkin pie spice for the cinnamon and nutmeg.

Recipe Ingredients for Pumpkin muffins

2 cups sugar
1/2 cup oil
1/2 cup applesauce
4 eggs
15 oz pumpkin
3 1/3 cups flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2/3 cup water
1/2 cup walnuts
1/2 cup raisins

Recipe Directions for Pumpkin muffins

  1. Preheat oven to 350 F

  2. Spray two muffin tins with non stick baking spray

  3. Using an electric mixer, beat together the sugar, oil, applesauce and eggs, then beat in the pumpkin.

  4. In a separate bowl, combine the dry ingredients.

  5. Stir the flour mixture into the pumpkin mixture alternating with the water until well mixed. Do not over beat.

  6. Fold in the nuts and raisins.

  7. Bake for 18 minutes our until a toothpick inserted into the center of a muffin comes out clean.

  8. Cool in the pans on a rack for 20 minutes

  9. Turn out and allow to cool completely.
