Healthy pumpkin muffins perfect for the Fall

Recipe Ingredients for Pumpkin Muffins

1 cup raisins
2 3/4 cups whole wheat flour
1/4 cup quick oats
1 cup splenda
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon ground cloves
3 eggs
29 ounce pumpkin
2/3 cup unsweetened applesauce
3/4 cup chopped walnuts
1 tsp. canola oil
1/4 cup milk

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 350 degrees F. Grease 2 12 cup muffin pans, or line with muffin liners. Soak the raisins in hot water for 10 minutes to plump.

  2. In a large bow, combine the dry ingredients. In separate bowl, combine the wet ingredients. Add the wet mixture to the dry mixture and stir thoroughly. Stir in the raisins and walnuts. Spoon batter into the muffin pans.

  3. Bake for 30 to 35 minutes.
