Cooking light makeover (with reviewer changes) to reduce fat and calories of Pumpkin bread. Reviewers also added some flax seed (1/4 cup). Muffins are better way to gauge serving size.

Recipe Ingredients for Pumpkin muffins

1 1/3 cup whole wheat flour
2 cup all purpose flour
1 T baking powder
2 tsp baking soda
1 tsp salt
1 T cinnamon
2 tsp nutmeg
1 tsp allspice
2 cup sugar
1/4 cup canola oil
1/4 cup applesauce
1/2 cup fat free yogurt
4 large eggs
2/3 cup water
15 oz pumpkin

Recipe Directions for Pumpkin muffins

  1. Preheat oven to 350

  2. Mix all dry ingredients together in separate bowl

  3. Beat canola oil through pumpkin until well blended

  4. Add in dry ingredients and mix until batter is smooth

  5. Use approx. 1/4 cup of batter per muffin cup

  6. Bake for 20 minutes
