Recipe Ingredients for Pumpkin Muffins

2 cup canned pumpkin
1 cup unsweetened applesauce
1 cup brown sugar
2/3 cup water
2 eggs
2 egg whites
3 1/2 cup whole wheat flour
2 tsp baking soda
1 1/2 tsp nutmeg
1/2 tsp ginger
1 1/2 tsp cinnamon

Recipe Directions for Pumpkin Muffins

  1. Blend pumpkin, sugar, applesauce, water, eggs and egg whites.

  2. Add flour, soda and spices.

  3. Blend at low speed until moistened, then beat 1 minute at medium speed.

  4. Pour into 2 non-stick, sprayed and floured loaf pans.

  5. Bake until toothpick comes out clean

  6. Temp: 350

  7. Time: 55 to 60 minutes
