Recipe Ingredients for Pumpkin muffins

2 eggs
1 cup sugar
1 cup canned pumpkin
2/3 cup olive oil
1/4 cup water
1 2/3 cup all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon

Recipe Directions for Pumpkin muffins

  1. Preheat oven to 350 degrees.

  2. Line 12-cup muffin tin with paper muffin liners. Set aside.

  3. Mix eggs, sugar, pumpkin, olive oil and water in medium bowl. Set aside.

  4. Mix flour, baking soda, salt, baking powder, cloves, nutmeg and cinnamon in small bowl.

  5. Stir dry ingredients into wet ingredients. Divide batter evenly into prepared muffin tin. Bake for 20 to 25 minutes, or until toothpick inserted in center muffin comes out clean. Cool on wire rack for 5 minutes before removing muffins to cool completely.
