Pumpkin Muffins Recipe

A basic not to good for you recipe. A good starting point if you want to experiment with healthy alternatives such as replacing all or some of the oil with appleauce or flaxmeal. Reducing the sugar or using your favorite sugar substitute.

Recipe Ingredients for pumpkin muffins

1 1/2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup pumpkin puree
2/3 cup brown sugar
2/3 cup vegetable oil
1 egg

Recipe Directions for pumpkin muffins

  1. preheat oven to 350 degrees

  2. line muffin tin with papers or grease tin with shortening

  3. mix dry ingredients including spices in medium bowl

  4. in a large mixing bowl beat pumpkin, brown sugar and oil until thoroughly mixed

  5. add egg to pumpkin mixture and mix thoroughly

  6. stir in dry ingredients mix just until combined

  7. spoon into muffin tin

  8. bake 20-25 minutes let cool at least 10 minutes in pan before enjoying
