Healthy, easy, quick, VERY MOIST muffins that are good for breakfast, snacking or even dessert! They taste great with cream cheese frosting if you want to use them as cupcakes for a party, but they're so moist they don't even need butter. They will keep well in ziploc bags- the outsides will get messy and look soggy but the muffins do not get soggy.

Recipe Ingredients for Pumpkin Muffins

8 oz canned pumpkin
1 box spice cake mix

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 375.

  2. Mix ingredients.

  3. Place into greased muffin cups. Recipe makes about 6-8 regular sized muffins (bake about 25 minutes or until muffin top springs back when pushed with finger) or 24 bite sized muffins (bake about 15 minutes).
