Delicious, Momalicious, Pumpkin muffins

Recipe Ingredients for Pumpkin Muffins

1 cup whole wheat flour
1/2 cup white flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
15 oz can pumpkin
1/4 cup extra virgin olive oil
1 1/4 cup maple syrup
1 tablespoon vanilla

Recipe Directions for Pumpkin Muffins

  1. preheat oven to 350 degrees

  2. mix dry ingredients together in a bowl.

  3. in a separate bowl mix all wet ingredients

  4. fold the wet ingredients (and fold nuts if using) into the dry ingredients and spoon into paper-lined muffin or greased muffin tins.

  5. bake for 20 minutes or when toothpick inserted comes out clean. Remove to cool.

  6. Store completely cooled muffins in sealable plastic bags in the freezer and packi n the kids' lunch.
