Delicious muffins made with pumpkin purée and pumpkin pie spice.

Recipe Ingredients for Pumpkin Muffins

2/3 cup sugar
1/3 cup canola oil
1 cup all purpose flour
1 cup whole wheat flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup canned pumpkin
1/2 cup Skim Milk
1 tbsp Pumpkin Pie Spice

Recipe Directions for Pumpkin Muffins

  1. Cream together oil and sugar.

  2. Add in flour.

  3. Add baking powder and salt.

  4. Add in pumpkin pie spice.

  5. Add in pumpkin purée.

  6. Add in enough milk to make batter moist. At least 1/2 cup, up to 1 cup.

  7. Spoon into 12 muffin cups.

  8. Bake at 350° for 20 minutes, or until a toothpick inserted in muffin comes out clean.
