Recipe Ingredients for Pumpkin Muffins

3/4 cup vegetable oil
3 cups oat flour
2 tsp baking powder
1/2 tsp baking soda
1 tbs pumpkin pie spice
2 cups pumpkin puree
1 cup plain low fat yogurt
6 egg whites
1 cup turbinado sugar
1 1/2 cups walnuts

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 350F and brush jumbo muffin tin with oil.

  2. In medium bowl, whisk flour, baking powder, baking soda, pumpkin pie spice and set aside.

  3. In large bowl, whisk eggs, oil, pumpkin puree, yogurt, 1 c. sugar.

  4. Add 1 cup walnuts and dry ingredients, mix just until moistened.

  5. Do not over mix.

  6. Divide evenly and spoon batter into muffin tins, sprinkle tops with walnuts and sugar.

  7. Bake until a toothpick comes out clean, 35 - 40 minutes.
