Delicious homemade muffins, can be made with any pureed fruit.

Recipe Ingredients for Pumpkin Muffins

12 oz Pumpkin
0.5 cup, packed Sugars, Brown
6 oz Vegetable Oil, Canola
2 large Egg, Whole
1.75 cup White Flour, Unbleached
0.75 tsp Baking Powder
0.25 tsp Baking Soda
2 tsp Cinnamon, Ground
1 tsp Ginger, Ground

Recipe Directions for Pumpkin Muffins

  1. mix brown sugar, pumpkin, eggs, oil and spices.

  2. Mix dry ingredients separately.

  3. Stir dry ingredients into pumpkin mixture just until no flour shows. Do not overmix.

  4. Bake in Preheated 400 degree oven in muffin tins for 18-20 minutes.
