Yummy pumpkin muffins or loaves. A fall treat!

Recipe Ingredients for Pumpkin Muffins or Loaves

2 cups pumpkin
2 1/4 cups sugar
1 tsp salt
3 eggs
1 tbsp baking soda
1 tbsp cinnamon
1 tbsp allspice
3/4 cup vegetable oil
1 cup whole wheat flour
1 3/4 cup flour

Recipe Directions for Pumpkin Muffins or Loaves

  1. Lightly beat eggs. Add pumpkin and oil and mix thoroughly. Stir together dry ingredients. Add to pumpkin/oil mixture and stir just until combined.

  2. Pour into muffins tins lined with paper muffin cups. Or into loaf pans.

  3. Bake muffins at 350 for 30 minutes. For loaves grease and flour loaf pans and fill about half full with batter. Bake for 40 to 70 minutes depending on size. Test with a toothpick.

  4. Cool for ten minutes before removing from pans.
