Delicious muffins with a lovely crunchy topping.

Recipe Ingredients for Pumpkin Muffins with Crunchy Sugar Topping

2/3 cup canola oil
2 2/3 cups sugar
4 eggs
2 cups pumpkin puree
1/2 cup nonfat milk
3 1/3 cups flour
2 t baking soda
1 t salt
1 t baking powder
1 t pumpkin pie spice
1 t cinnamon

Recipe Directions for Pumpkin Muffins with Crunchy Sugar Topping

Mix it all up. Pour batter into greased muffin cups. If desired, sprinkle 1 scant teaspoon raw sugar on top of muffin batter. Bake until a toothpick inserted in center of muffin comes clean.
