Recipe Ingredients for Pumpkin Muesli

1/4 cup pumpkin puree
1/4 cup quick-cooking oats
8 oz light vanilla yogurt
1 tablespoon honey
1 oz almonds (2 T slivered)

Recipe Directions for Pumpkin Muesli

  1. Combine pumpkin and oats in a bowl. Cover with plastic wrap and microwave for 20 seconds; set aside 10 minutes (so liquid will be absorbed). ]

  2. Mix yogurt, honey and zest in another bowl. Swirl in pumpkin mixture.

  3. You can top this with 1 sliced strawberry and 2 T slivered almonds. I bought Blue Diamond's vanilla flavored whole almonds and ate those instead.
