A lighter version of the traditional pumpkin pie, better suited to warmer months! You can also add raisins or other dried fruit to spice up the texture.

Recipe Ingredients for Pumpkin Mousse Pie

1 cup crumbled graham crackers
1/2 cup whole wheat flour
1/4 cup Promise light spread
1/2 cup walnuts, powdered
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
15 oz. canned pumpkin
1/4 cup 1% milk
1 cup plain low fat yogurt
1/2 cup Splenda sweetener
1 egg

Recipe Directions for Pumpkin Mousse Pie

  1. Preheat oven to 375 F.

  2. Mix the graham cracker crumbs, whole wheat flour, Promise, walnuts, and half the cinnamon and nutmeg.

  3. Press the graham cracker mix into a 9-inch pie pan and put in the refridgerator to set.

  4. Scoop the pumpkin into a large mixing bowl.

  5. After emptying the can, pour the milk into it and shake the can, covering the top, to loosen any remaining pumpkin. Pour milk onto pumpkin in the bowl.

  6. Use an electric mixer (hand or standing) to combine the pumpkin, milk, yogurt, egg, Splenda, and remaining spices.

  7. Pour the pumpkin mixture into the cooled pie crust, and spread evenly.

  8. Bake the pie for 35 minutes, or until the crust edges and top of pie are browned.

  9. Allow to cool before serving. Also delicious chilled with a scoop of lite whipped cream!
