Recipe Ingredients for Pumpkin mini muffins

1/2 cup granulated sugar
1/4 cup packed brown sugar
1/8 cup canola oil
2 medium eggs
8 ounce canned pumpkin
1 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Recipe Directions for Pumpkin mini muffins

  1. Combine granulated sugar, brown sugar, and oil in a large bowl; beat with a mixer at medium speed 2 minutes or until well blended. Add eggs; beat until well blended. Add pumpkin, beating until blended.

  2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and next 3 ingredients (through salt) in a medium bowl. Gradually add flour mixture to pumpkin mixture, beating just until blended.
