Adapted from "Fat to Skinny". Makes four small loaves. Serving size is one slice (6 per loaf).

Recipe Ingredients for Pumpkin Mini-Loaves

4 eggs
1 c xylitol
2 c canned pumpkin
1 c almond meal
2 scoops whey protein
1 1/2 c flax meal
1 tsp salt
2 tsp baking soda
2 tsp baking powder
1 tsp nutmeg
1 tsp allspice
2 tsp cinnamon
1/2 tsp ground cloves

Recipe Directions for Pumpkin Mini-Loaves

  1. Preheat oven to 350.

  2. Add eggs, xylitol and pumpkin to a mixing bowl and mix well.

  3. Combine dry ingredients in another bowl.

  4. Add dry ingredients to wet while mixing thoroughly.

  5. Divide batter between 2 regular loaf pans or 4 mini loaf pans, well greased.

  6. Bake for 50-60 minutes, or until a cake tester comes out clean.
