Moist muffins with a nice crunch.

Recipe Ingredients for Pumpkin-Millet muffins

1 1/2 c unbleached white flour
1/2 c whole wheat flour
1/4 tsp baking powder
1 tsp baking soda
3/4 c sugar
2 tsp pumpkin spice
1/2 c millet
2 eggs
1/4 c vegetable oil
1 c pumpkin puree
1/2 c water
2 tbsp maple syrup
1/2 raisins

Recipe Directions for Pumpkin-Millet muffins

Mix together all dry ingredient in a large bowl. In another bowl beat eggs, oil, pumpkin puree, water, syrup & raisins. Add wet ingredients to dry ingredients, and mix until just combined. Scoop into greased or paper-lined muffin tin. Bake at 375 degrees for 20-30 minutes. Makes a dozen large muffins, or 18 small muffins.
