Recipe Ingredients for Pumpkin Marshmallow Nut Tarts

74 no peanuts mixed nuts
25 grams almond flour
75 grams gluten-free flour
24 grams honey
50 grams Brummel & Brown spread
2 eggs
20 grams Ideal sweetener
1 tsp vanilla
2 tsp baking powder
1/2 tsp allspice
1 tsp ground ginger
1 tsp ground nutmeg
2 tsp ground cinnamon
115 grams Fage 2% plain Greek yogurt
410 grams canned pumpkin, plain
6 tbsp marshmallow topping

Recipe Directions for Pumpkin Marshmallow Nut Tarts

  1. Grind nuts in a food processor, coffee mill, or nut chopper.

  2. Combine nuts, flours, Brummel & Brown, honey, and the white of one egg.

  3. Press crust mix into bottom of 6 muffin cups.

  4. Whisk together remaining eggs, vanilla, Ideal, and spices.

  5. Fold in yogurt and pumpkin.

  6. Pour pumpkin custard over crusts.

  7. Bake for 25 minutes.

  8. Remove from oven, top each tart with 1 tbsp marshmallow topping, and return to oven.

  9. Bake for another 10 minutes.

  10. Cool before removing from pan.
