Recipe Ingredients for Pumpkin Mac n' Cheese

1/2 cup parmesan cheese
1 cup pumpkin
3/4 cup cream
2 cups cheddar cheese
16 oz. pasta
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
2 tbsp. butter
1 tbsp. extra virgin olive oil
3 tbsp. onion
3 tbsp. flour
2 cups chicken broth

Recipe Directions for Pumpkin Mac n' Cheese

  1. Boil pasta.

  2. In medium saucepan, heat oil and butter until melted. Add grated onion and cook till tender. Add flour and stir until blended. Whisk in broth and then add cream. Whisk in pumpkin and bring to a boil. Turn down heat and add cheeses. Mix until melted. Add salt, pepper and nutmeg to taste.
