Tasty, creamy JUST RIGHT baked mac and cheese.

Recipe Ingredients for Pumpkin Mac and Cheese

16 oz Large Shells
15 oz Pure Pumpkin
3 cup Fancy Colby-Jack Shredded Cheese
300 grams Soy Milk
2 cup Spinach
3 tbsp Butter
1 cup Panko

Recipe Directions for Pumpkin Mac and Cheese

  1. Cook and drain pasta.

  2. Heat up milk until almost boiling. Mix in pumpkin and let cook until mixture thickens.

  3. Mix in cheese and spinach. Add 1/2 teaspoon nutmeg, salt and pepper. (optional: add paprika, cayenne). Mix in pasta.

  4. Pour into baking dish.

  5. Mix paprika, cayenne and garlic powder into panko crumbs.

  6. Melt butter and mix into crumbs. Sprinkle panko over the pasta.

  7. Bake 30-35 minutes at 375.
