Recipe Ingredients for Pumpkin Log

3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 tablespoon lemon juice
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup pecans, chopped
1 cup powdered sugar
6 ounces cream cheese
4 tablespoons butter, softened
1/2 teaspoon vanilla extract

Recipe Directions for Pumpkin Log

  1. 3 eggs, beaten 5 minutes

  2. 1 c. sugar, added

  3. 3/4 c. pumpkin

  4. 1 tsp. lemon juice

  5. 3/4 c. flour

  6. 1 tsp. baking powder

  7. 1/2 tsp. salt

  8. 1/2 tsp. cinnamon

  9. Pour on greased waxed paper cookie sheet and bake 15 minutes at 350 degrees. Turn out on powdered sugar towel. Roll into log with towel while still hot.

  10. FILLING:

  11. 1 c. powdered sugar

  12. 4 tsp. butter

  13. 8 oz. cream cheese

  14. 1/2 tsp. vanilla

  15. 1 c. nuts (optional)

  16. Beat until smooth and spread on cake. Roll like a jelly roll in sugared towel.
