Recipe Ingredients for Pumpkin Loaf

3/4 cup Splenda Granular
1 1/2 cups Maple Grove Farms Reduced fat pancake mix
1/2 cup Pure Canned Pumpkin
1/2 cup Egg Substitute
1 tablespoons Brown Sugar
1 teaspoon Cinnamon
1 teaspoon Baking Soda
2 teaspoons Vanilla

Recipe Directions for Pumpkin Loaf

Preheat oven to 325 degrees. Spray a 5x9 inch loaf pan with non-stick cooking spray and set aside. In a medium bowl, combine the Splenda, pumpkin, egg substitute and vanilla. Add the pancake mix, brown sugar, baking soda, cinnamon; mix with a spoon until combined. Pour into prepared pan and bake for 35-45 minutes . Cool for 10 minutes in the pan, then dump it out onto a wire rack to finish cooling. Cut into 10 slices.
