Used Sugar instead of Splenda, raisins instead of chocolate chips, so we'll see which loaf is better! The recipe called for 1 3/4 cups of flour, but I THINK I read it wrong, so hopefully this will turn out anyway!!

Recipe Ingredients for Pumpkin Loaf

1/4 cup applesauce
1/4 cup canned pumpkin
1 cup sugar
2 eggs
1 cup canned pumpkin
1 1/3 cup flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. pumpkin pie spice
1 tsp. ground cinnamon
160 g (1 cup) Organic raisins

Recipe Directions for Pumpkin Loaf

  1. In a mixing bowl, cream applesauce, pumpkin (first 1/4 cup) and sugar. Add eggs and remainder pumpkin. Mix well.

  2. Combine the flour, baking soda, cinnamon, salt and pumpkin pie spice.

  3. Gradually add to the creamed mixture.

  4. Stir in Raisins.

  5. Pour into greased 8.5" X 4.5" X 3" pan. Bake at 350 degrees for 65 - 70 minutes or until a toothpick inserted near the centre comes out clean.

  6. Cool for ten minutes before removing from pan to a wire rack to cool completely.
