Pumpkin Loaf Recipe

Great for a dessert or snack, especially with whip cream on top. Yum!

Recipe Ingredients for Pumpkin Loaf

3 eggs
1 cup sugar
2/3 cup fresh pumpkin
1 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup flour
2 tablespoon butter
1 teaspoon vanilla
8 ounces cream cheese
1 cup powdered sugar

Recipe Directions for Pumpkin Loaf

  1. Mix eggs, sugar, pumpkin, baking soda, cinnamon and flour.

  2. Bake at 350 degrees for 12-15 minutes on greased cookie sheet (will look thin).

  3. Flip out of pan onto powdered sugar (on paper towel).

  4. Roll up into paper towels and let cool.

  5. Filling:

  6. Mix butter, vanilla, cream cheese and powdered sugar well until there are no lumps.

  7. Unroll loaf.

  8. Spread filling onto loaf.

  9. Reroll without paper towels.

  10. Put into container and refrigerate.
