Muffins great for breakfast. Ground almonds (almond flour) have a lot of vitamin E! Great antioxident. Use canned pure pumpkin not sweetened pumpkin pie mix. Serve with 4 oz cream cheese sweetened with non- calorie sweetner to taste, 1 teaspoon orange or vanilla flavoring, and grated orange zest if desired. Can add walnuts or pecans to batter as desired. Can also serve with low fat sugarless whipped cream or low calorie butter substitute.

Recipe Ingredients for Pumpkin Loaf or Pumpkin Muffins

2 1/2 cups ground almonds
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
3 eggs
6 egg whites
1 1/2 cups pure pumpkin
1 1/2 teaspoons vanilla extract

Recipe Directions for Pumpkin Loaf or Pumpkin Muffins

  1. Add 1 1/2 cups non calorie sugar substitute (Splenda) or equivalent to the ingredient list. (I use 4 tablespoons plus 2 teaspoons of Somersweet).

  2. Preheat oven to 300 degrees F. (for 9 x 5 inch loaf pan)

  3. Preheat oven to 375 degrees F. (for 12 muffins)

  4. Spray loaf pan with vegetable spray and spinkle with 2 tablesppons of wheat bran, shake pan to coat all sides.

  5. In bowl whisk ground almonds, sugar substitute, baking powder, pie spice, and salt.

  6. In separate bowl, beat eggs and whisk in pumpkin and vanilla.

  7. Combine wet and dry ingredients and stir. Pour batter into prepared pan.

  8. Bake until golden brown and toothpick comes out clean in center. 1 1/2 hours for loaf. 20-25 minutes for muffins.

  9. Cool completely before removing from pan. .
