Fall vegetables and lentils make for a warming hearty vegetarian stew

Recipe Ingredients for Pumpkin Lentil stew

1 1/2 winter squash
1 med. onion
1 cup uncooked lentils
1/2 cup uncooked quinoa
3 medium carrots
1 stalk celery
1 hot pepper
4 cups chicken stock
2 T. mixed herbs
1 1/2 cups uncooked swiss chard

Recipe Directions for Pumpkin Lentil stew

  1. heat 3 T. olive oil

  2. add onions, carrots, celery

  3. deseed and peel squash, cut into a large dice

  4. add to sauteed vegetables

  5. continue cooking for 3 - 5 min. stirring often

  6. add lentils and 1 cup of stock, stir often

  7. add remaining stock and quinoa, bring to a boil

  8. Add herbs, reduce heat to a low simmer and cover- cook until all vegetables are soft and lentils are cooked through

  9. Add chard and serve in bowls.
