Pumpkin Lasagne Recipe

Meat free lasagne, great for fall cooking.

Recipe Ingredients for Pumpkin Lasagne

29 ounces canned pumpkin
3/4 pound whole wheat pasta
2 cups fat free half and half
2 cups grated parmesan cheese
2 pounds swiss chard
2 medium onions
2 tablespoons olive oil

Recipe Directions for Pumpkin Lasagne

  1. chop onions and cook in olive oil until transclucent

  2. add swiss chard, 1/2 teaspoon salt, 1 tsp pepper and 1/2 tsp nutmeg and cook down until no liquid is left

  3. mix 2 cups of pumpkin with 3/4 cup ff half and half, 1 cup grated parmesan, 1 tsp pepper, 1 tsp chopped sage and 1/2 teaspoon nutmeg

  4. mix remaining pumpkin with 3/4 ff half and half

  5. heat oven to 400

  6. pour remaining ff half and half in pan and layer lasagne noodles, pumpkin/cheese mix and swiss chard for two layers.

  7. top last layer of noodles with other pumpkin mix and spread remaining chees over top. Cook covered 1/2 hour and then another 1/2 hour uncovered.
