Recipe Ingredients for Pumpkin Lasagna (Vegetarian)

3 cups canned pumpkin
5 cups low-fat milk
2 T italian seasoning
1 t nutmeg
1 clove garlic, smashed
1/2 lb. lasagna noodles
2 cups shredded italian cheese blend

Recipe Directions for Pumpkin Lasagna (Vegetarian)

  1. Preheat oven to 400 degrees. Over medium-high heat, boil milk with italian seasoning, nutmeg and garlic. Boil for 5 minutes.

  2. Discard garlic; simmer for 10 minutes longer. Sauce can be made 2 days in advance.

  3. If you are not using fresh lasagna sheets, boil noodles (even no-boil variety) according to package instructions.

  4. Layer lasagna noodles, sauce, pumpkin and cheese. In a lasagna pan, coat bottom with 3 tablespoons of sauce. Place a layer of noodles over sauce. On top of noodles, add 1/3 of the pumpkin, 1/3 of the sauce and 1/3 of the cheeses. If you are using canned pumpkin, drop by the teaspoonful on top of lasagna layer. Continue with another layer of noodles, followed by pumpkin, sauce and cheese until ingredients are used.

  5. Cover with foil, making a tent so it does not touch the top layer of cheese. Bake for 30 to 40 minutes. Uncover and bake for 10 minutes longer. Let sit 5 minutes before serving. Garnish with a sprinkle of italian seasoning.
