Original recipe calls for 1/2 c sugar but I subbed in honey. Also calls for reg sugar but I subbed in whole wheat flour. I did use fresh pumpkin! But I bet you could use canned.

Recipe Ingredients for Pumpkin Kugel

1 pound fresh pumpkin
1/2 cup mayonnaise
5 eggs
3 tbsp. whole wheat flour
1/2 stick margarine
1/3 cup honey

Recipe Directions for Pumpkin Kugel

  1. Place pumpkin in boiling water.

  2. Steam until the pumkin is soft enough to be mashed with a fork.

  3. Drain pumpkin and mash.

  4. Add mayonnaise, eggs, flour, margarine and sugar.

  5. Pour into a baking pan.

  6. Bake at 350 degrees Fahrenheit for 45 minutes or until solid.
