Recipe Ingredients for Pumpkin Gingerbread

1 cup sugar
1/2 cup brown sugar
1/2 cup unsweetened applesauce
2 eggs
1/4 cup water
1 cup pumpkin puree
1 teaspoons ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon, heaping
1/2 teaspoon ground cloves
1 cup flour
3/4 cups whole wheat pastry flour
1 teaspoon baking soda
1/8 teaspoons salt
1/4 teaspoon baking powder

Recipe Directions for Pumpkin Gingerbread

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.

  2. In a large mixing bowl, combine sugar and eggs; beat until smooth and light in color (about 5 mins). Add applesauce, water, pumpkin, ginger, allspice cinnamon, and cloves and mix well.

  3. In medium bowl, combine flours, baking soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Pour batter between into pan.

  4. Bake in preheated oven until toothpick comes out clean, about 1 hour.

  5. Serve while still slightly warm. Left overs are great toasted.
