Wonderful quick bread that will spice up your morning cup of coffee!

Recipe Ingredients for Pumpkin Gingerbread

75 g sucanat (1/2c.)
1/2 cup brown sugar
1/2 cup applesauce no sugar added
2 eggs
7 oz. canned pumpkin
1 tsp. ground ginger
1/2 tsp. ground allspice
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1 cup flour
3/4 cup whole wheat pastry flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1/3 cup raisins

Recipe Directions for Pumpkin Gingerbread

  1. Preheat oven to 350 degrees. Lightly grease 4 mini loaf pans.

  2. In a large mixing bowl, combine sugar, applesauce and eggs. Mix well. Add pumpkin, ginger,allspice, cinnamon and cloves.

  3. In a medium bowl, combine flour, soda, salt and baking powder. Add dry ingredients to pumpkin mixture and blend just until alll ingredients are mixed. Add raisins. Divide batter between the 4 pans.

  4. Bake in preheated oven 30-35 minutes, or until done.
