Pumpkin Ginger Soup - Can be made with butternut squash

Recipe Ingredients for Pumpkin Ginger Soup

2 cups pumpkin
1 tsp vegetable oil
1/2 cup onion
1 tbsp fresh ginger
4 cups chicken stock

Recipe Directions for Pumpkin Ginger Soup

  1. Saute onions in veg oil until translucent

  2. Add chicken stock

  3. add 2 cups pureed pumpkin

  4. grate in fresh ginger, let simmer for 5 min - use hand blender or blender to smooth....add water to get desired consistency
