Pumpkin Pie in a muffin variation of Banana Oat Muffins

Recipe Ingredients for Pumpkin Ginger Muffins

3/4 cup flour
3/4 cup oats
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp allspice
1 tsp ground ginger
1/3 cup brown sugar
2 egg whites
1 cup pumpkin
1/4 cup 1% milk
1/2 cup unsweetened applesauce

Recipe Directions for Pumpkin Ginger Muffins

  1. In a large bowl combine dry ingredients and mix until blended.

  2. In a small mixing bowl beat egg whites, pumpkin, milk and applesauce.

  3. Stir in dry ingredients until just moistened. Spray muffin tin with PAM, or line with muffin cups.

  4. Fill muffin cups 2/3 full.

  5. Bake at 400 degrees for 15 minutes or until tops spring back when pressed
