Recipe Ingredients for Pumpkin-Ginger Muffins

3 1/2 cups flour
1 1/8 tsp baking soda
1 tsp salt
2 1/2 tsp ground cinnamon
2 tsp ground nutmeg
2 tsp ground ginger
1 tsp ground allspice
1/4 tsp ground cloves
2 tbs ground flaxseed
3/4 cup granulated sugar
3/4 cup brown sugar
1/2 cup canola oil
1/2 cup unsweetened applesauce
5 eggs
1 1/2 cups canned pumpkin
1/4 cup crystallized ginger
4 tbs turbinado sugar
1 cup lowfat buttermilk

Recipe Directions for Pumpkin-Ginger Muffins

  1. Preheat oven to 375 degrees and spray two muffin tins with cooking spray.

  2. Combine flour, baking soda, salt, spices, and flaxseed in a bowl. In a separate bowl, mix sugars, applesauce and oil until combined. Add eggs one at a time, incorporating each after adding. Stir in pumpkin and crystallized ginger.

  3. Alternate adding flour mixture and buttermilk, folding in gently, until everything is combined. Grease muffin tins and fill 3/4 full. Sprinkle small amount of turbinado sugar on each for a sweet crunchy topping.

  4. Bake at 375 degrees for 20 minutes. Makes 24 muffins.
