Recipe Ingredients for Pumpkin French Toast Casserole (adapted)

12 slices Soft Oatmeal Bread
1 cup canned pumpkin
4 oz silken tofu
8 oz Vanilla
2 tablespoons corn starch
2 tsp cinnamon
1 tsp nutmeg
1 tsp ginger, grated
1/2 tsp Allspice, Ground
1/2 cup Organic Maple Syrup
1 tsp grated nutmeg

Recipe Directions for Pumpkin French Toast Casserole (adapted)

  1. Chop bread into bite size cubes and place into pan sprayed with cooking spray. Ideally the bread should be arranged so that it is in a single layer.

  2. Put the tofu with a little milk into a food processor or blender and buzz until until all the little tofu lumps are gone. Add in the pumpkin, milk, syrup and mix to combine. Pour all of the liquid over the bread to coat.

  3. Cover and refrigerate casserole overnight. The next morning, pull out the casserole and bake for ~45 minutes at 350.

  4. Tip: In the event your bread looks a little dried out in the morning, freshen it up with a few pats of butter and a tiny drizzle of milk.
