A great alternative to pumpkin pie

Recipe Ingredients for Pumpkin Flan

1/2 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/8 tsp cayenne pepper
15 oz canned pumpkin
1/8 tsp salt
1 cup fat free evaporated milk
1/4 cup orange juice
3/4 cup eggbeaters

Recipe Directions for Pumpkin Flan

  1. Preheat oven to 350

  2. stir together brown sugar, cinnamon, cloves, cayenne, & salt in a large bowl. Whisk in pumpkin, milk, oj, & eggbeaters, divide among 8 6oz Ramikins.

  3. set cups in high rimmed pan & pour boiling water around them to a depth of 1". Bake until firm and slightly puffed (appx 45 min). Remove cups from water, cool completely, cover & refrigerate. Top with fat free whipped cream before serving.
