Yes, it has a ton of sugar, but it's for a special occasion!

Recipe Ingredients for Pumpkin Flan

2 cups sugar
12 oz fat free evaporated milk
8 oz whole milk
8 large egg whites
3 large egg yolks
15 oz can pumpkin
1 1/2 t cinnamon
1 t ground ginger
1/4 t nutmeg
1/4 t salt

Recipe Directions for Pumpkin Flan

  1. Caramelize 1 cup of the sugar and pour into a flan dish. Set aside and allow to harden.

  2. Heat the cream milk and remaining 1 cup sugar in a pot until it begins to steam and the sugar has dissolved.

  3. Whisk together the egg whites and yolks, pumpkin, spices, and 1 t vanilla in a bowl.

  4. Pour the hot milk mixture into the egg mixture a little at a time, whisking continuously.

  5. Pour the mixture over the hardened caramel in the dish, place the dish into a water bath and bake at 335F until it just jiggles in the middle, but is not liquid. DO NOT OVERBAKE!

  6. Chill in the pan overnight, unmold, and serve with the thin caramel sauce that forms in the pan.
