This salad is great with grilled meat or roast chicken. The mayo dressing does have a few calories, but it's soo worth it!

Recipe Ingredients for Pumpkin and Fetta Salad

2 inner leaf Lettuce, Cos Or Romaine
245 grams Pumpkin
1 oz Feta Cheese, Fat Free
1/2 cup slices Cucumber
1 tbsp Mayo Light Mayonnaise Salad Dressing
0.5 clove Garlic

Recipe Directions for Pumpkin and Fetta Salad

  1. Cut the pumpkin into 1cm cubes and boil until tender but not soggy. Place in the fridge for about half an hour or until cool.

  2. While the pumpkin is cooling, shred the lettuce, cube the fetta and slice the cucumber. Place in a bowl.

  3. Finely chop the garlic and chives and mix into the mayo. Combine this with the salad.

  4. When the pumpkin is cool, very gently stir it into the salad and voila! You're done.
