Recipe Ingredients for Pumpkin Drop Cookies

1/4 cup butter
1 cup sugar
15 ounce pumpkin
1 egg
1/4 cup milk
3 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup butter
1 1/4 cups confectioners' sugar
1 tablespoon milk
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Recipe Directions for Pumpkin Drop Cookies

  1. In a large mixing bowl, cream shortening and sugar. Beat in the pumpkin, eggs and milk. Combine the flour, baking soda, cinnamon, salt, nutmeg and cloves; gradually add to creamed mixture. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375 degrees F for 10-13 minutes or until lightly browned. Remove to wire racks to cool completely.

  2. In a small mixing bowl, combine the frosting ingredients; beat until smooth. Frost cookies. Store in the refrigerator.
